Shallots

Grower: Gid’s Produce

Care: Store in a cool, dark, well-ventilated area for up to 1 month.

Recipe: Compound Butter with Garlic, Shallots & Herbs , Deviled Eggs with Crispy Shallot Gremolata, Caramelized Shallot and Gruyere Cheese Fondue

Sweet Corn

Grower: Kistaco Farm

Store: Store in the refrigerator unshucked and in a bag.

Recipe: Cheddar Bacon Ranch Corn, Curried corn on the cobCaramel Corn on the Cob

White Peaches

Grower: Dawson’s Orchards

Store: Store peaches at room temperature until ripe. Refrigerating peaches before they are ripe can

lead to loss of flavor and texture. After they ripen on the counter top, place them in a plastic bag in the refrigerator.

Recipe: White Peach Iced TeaWhite Peach Cobbler,  White Peach Walnut Loaf

Green or Carmen Peppers

Grower: Blue Goose Farm/ Weeping Willow Farm

Store: Store the peppers in a tightly sealed plastic bag on the top shelf of the fridge (peppers store the best at between 45°F and 55°F). You can also freeze almost any kind of pepper for as long as a year; just seal them snugly in plastic bags. Frozen peppers will retain their flavor and heat, though their crunchy texture will be lost—not a problem in the case of chiles destined for cooked dishes and salsas.

Recipe: Black Pepper Steak  Eggplant and Roasted Carmen Pepper Sauce, Quiche Lorraine with Onion and Green Pepper

Lacinato Kale

Grower: Clarion River Organics (James Lengacher Farm)

Store: Wrap kale in a loose bundle with a damp paper towel or a thin cotton kitchen towel, place it in a large freezer bag, seal and refrigerate them in the crisper drawer

Recipe: Lemony Braised Lacinato Kale  Orecchiette with Cauliflower and Lacinato Kale Recipe, Lacinato Kale Salad with Grapefruit

Cantaloupe

Grower: Clarion River Organics (Riverbend Acres)** or Weeping Willow Farm

Store: Refrigerate ripe melons, but do not freeze. It is best not to cut a melon until you are ready to eat it. If you need to return cut melon to the refrigerator, do not remove the seeds from the remaining sections as they keep the flesh from drying out.

Recipe: Roasted Cantaloupe  Salmon with Cantaloupe and Fried Shallots, Prosciutto and Cantaloupe Appetizers

Yellow Summer Squash

Grower: Clarion River Organics (Country View Farm)

Store: Refrigerate yellow squash unwashed, in a plastic bag in the vegetable drawer.

Recipe: Parmesan Baked Squash And Zucchini Spears Lemon Summer Squash Bread, Easy Grilled Yellow Squash

Eggplant

Grower: Clarion River Organics (Country View Farm)

Store: Keep eggplant in a cool spot, away from direct sunlight, and use it as soon as possible after harvesting or buying. You can place it in a vented bowl, but avoid sealing it in a plastic bag, which can increase decay.  Eggplant is highly sensitive to ethylene, a natural gas that causes certain foods to ripen (and eventually spoil) very quickly. So it’s best to keep eggplant stored separately from bananas, tomatoes, and melons, which are all high ethylene producers.

Recipe: Eggplant Caponata , Spiced Peppers and Eggplant, Fried Eggplant

Grape Tomatoes

Grower: Clarion River Organics (Hidden Valley Farm)**
