Ohhh snap, it’s pea season! The shares this week include snow peas, snap peas and shell peas. Take a peek at the links below to learn a little more about their differences and how to cook with them. Hot tip: the sugar snap peas are AMAZING when you eat them raw.

SwissChard_PeppermintcropSwiss Chard

Grower: Nu Way Farm

Store: Do not wash Swiss chard before storing as the exposure to water encourages spoilage. Place chard in a plastic storage bag and wrap the bag tightly around the chard, squeezing out as much of the air from the bag as possible. Place in refrigerator.

Grower: Kistaco or Clarion River Organics

Store: Do not wash collard greens before storing as the exposure to water encourages spoilage. Place collard greens in a plastic storage bag and wrap the bag tightly around the greens, squeezing out as much of the air from the bag as possible. Place in refrigerator where it will keep fresh for up to 5 days.

Grower: Blue Goose Farm or Hostettler Farm

Store: These peas are fairly perishable and will decrease in flavor if stored for more than a few days. Keep them in a plastic bag in the refrigerator. Use snow peas within a couple of days of purchase, Sugar-snap peas should last for up to 5 days after purchase, both will be better if eaten sooner.

Store: These peas are fairly perishable and will decrease in flavor if stored for more than a few days. Keep them in a plastic bag in the refrigerator. Store: Refrigerate in plastic bag; do not shell peas until ready to use.

ZucchiniZucchini

Grower: Clarion River Organics

Store:  Refrigerate. Store freshly picked, unwashed zucchini in a plastic bag in the refrigerator for up to one week. The bag should be perforated or loosely tied, not sealed tightly. Do not cut the zucchini until you are ready to use it or freeze it.

Grower: Blue Goose Farm

Store: Refrigerate. Store freshly picked, unwashed summer squash in a plastic bag in the refrigerator for up to one week. The bag should be perforated or loosely tied, not sealed tightly. Do not cut the summer squash until you are ready to use it or freeze it.

Store: Cut the greens off and store in a cool spot.

Grower: Clubhouse Gardens

Store: Cut off the leafy stalks (you can use the leaves as you would kale or collard greens; be sure to use them with a few days) and scrub the kohlrabi bulbs clean, wrap them loosely in plastic or a paper bag, and refrigerate them until you’re ready to use them.

Shredded Green Cabbage Salad with Lemon and GarlicGreen Cabbage

Grower: Weeping Willow Farm

Store: Store in the refrigerator. Keep it wrapped. Wrapping cabbage in plastic and storing it in the crisper section of your refrigerator limits its exposure to air flow, and thus reduces spoilage. Just as importantly, plastic wrap keeps external moisture out, preventing mold and rot, while helping the cabbage to maintain its internal (cellular) moisture—without which, the cabbage leaves lose their firmness and begin to wilt.

Store: Store unwashed (or washed and dried) peppers in the refrigerator in a loosely closed plastic bag. Moisture is a pepper’s enemy and hastens spoiling. For peak flavor and nutrition, use within a week.

Description: Based on a recipe for an Italian style cheese traditionally made in the summer in the plateau region of the Dolomites. Ours is adapted to our wintertime whole milk in the rolling foothills of the Alleghenies. The favorite at the farmers market.
