Chopped Tomatoes

Grower: Penn’s Corner

Store:  Unopened, the chopped tomatoes should last up to a year. Once opened, use within 3-4 days.

Recipe: Beans and Feta Cheese on Toast, Breakfast Eggs in Spicy Tomato Sauce, Pork Chops and Garlicky Tomatoes with Parmesan Polenta


Magic Molly Potatoes

Grower: Clarion River Organics (Riverbend Acres)**

Store: Store potatoes in cool, dark, well-ventilated space like a basement or garage. Potatoes can store well for up to six months like this. Do not refrigerate.

Recipe: Crispy Roasted Purple Potatoes and Fried Shallots, Purple Potatoes with Garlic Cream Sauce, Roasted Purple Potatoes with Lemon, Dijon and Thyme Dressing


Spaghetti Squash

Grower: Gid’s Produce

Store: Store Spaghetti Squash is a cool, well-ventilated area for up to three months. Wrap cut pieces in plastic and refrigerate for up to five days.

Recipe: Cheesy Chicken Broccoli Stuffed Spaghetti Squash, Spaghetti Squash Hashbrowns, Spaghetti Squash Chow Mein


Red Onion

Grower: Clarion River Organics (Riverbend Acres)**

Storage: Whole dry bulb onions should be kept in a cool, dry, dark place with plenty of air movement. Do not store onions in plastic! Lack of ventilation will reduce their storage life. Refrigeration is only necessary when trying to extend the shelf life of sweet or mild onion varieties with high water content, but be sure to use a low humidity setting, they must be kept dry.

Jonagold Apples

Grower: Kistaco Farm

Store: Refrigerate apples in the crisper in a plastic bag with holes in it. Use up old or damaged apples and store apples separately as the ethylene gas they produce can help speed up the decay process of other fruits and vegetables.

Recipe: Butternut Squash, Jonagold Apples and Caramelized Onion Tian, Jonagold Apple Cake


Anaheim Peppers

Grower: Clarion River Organics (Matthew Schwartz Farm)**

Store: Place fresh peppers in a brown paper bag in the crisper section of the refrigerator. Peppers will store well for up to a week.

Recipe: Chili Relleno Casserole, Turkey Meatballs with Fire-Roasted Green Chiles (Anaheim Peppers), Bacon Wrapped Anaheim Chili Poppers


Bok Choy

Grower: Clarion River Organics (Riverbend Acres)**

Store: Store bok choy in the vegetable crisper for up to a week in a plastic bag.

Recipe: Grilled Bok Choy with Parmesan, Breadcrumbs and Lemon, Ginger Bok Choy Soup with Noodles, Bok Choy and Mushroom Stir-fry


Gold Beets

Grower: Clarion River Organics (Daniel Miller Farm)

Store: Store beets without their tops loose in an unsealed plastic bag in the fridge. Kept from moisture, they will last for weeks up to a couple of months. If the greens were attached, wrap them loosely in damp paper towel and keep in the crisper; the greens will last for about half a week.

Hydroponic Lettuce

Grower: Harmony Grove

Store: Store wrapped in a paper towel in a plastic bag in the vegetable crisper for up to two weeks. Replace paper towel when it becomes saturated with water.

Green Cabbage

Grower: Blue Goose Farm

Store: Store in the refrigerator in the crisper drawer with or without a plastic bag. Wrap tightly once cut.

Grower: Blackberry Meadows Farm

Store: Store in a cool, dark, well-ventilated area. Will keep this way for several months, but once you remove cloves from a bulb the garlic’s lifetime decreases more quickly.
