Winter CSA – Week of January 18th

Happy Monday, all! Another CSA week is here! Below, you will find a preview of this upcoming week’s CSA harvest bounty. Lots of yummy food and some great recipes to try. If you ever find a recipe that you particularly enjoy, please share it with us! We always love hearing about what our members are cooking up!

 hydroponic lettuce, Harmony Grove Farm
 2 bulbs large garlic, Blue Goose Farm or Clubhouse Gardens (CNG)

 1 bunch green kale or collard greens, Tuscarora Organic Growers** (OG)
 12 oz. honey, Bedillion Honey Farm

OG = Certified Organic, CNG = Certified Naturally Grown 

**This week’s VEGAN share will substitute butternut squash, shallots and apple butter to replace the eggs and honey.

**This week’s GLUTEN-FREE share contains no substitutes.

**The kale and collard greens in this week’s share are from Eastern Carolina Organics, a farmer-owned cooperative and partner of Tuscarora Organic Growers. We’re happy to be able to offer more diversity in our Winter CSA shares because of these partnerships.

Sweet Potatoes

Grower: River View Farm

Store: Keep potatoes in a brown paper bag and store at 45 – 50 degrees. Potatoes can also be refrigerated.

Grower: Clarion River Organics

Store: Before use, store shallots in a dark, cool, dry location. Cut shallots should be stored in the refrigerator.

Grower: Clarion River Organics

Store: Store celeriac in the salad drawer of your refrigerator. **Celeriac discolors quickly, but after chopping to size you can immerse it in a bowl of water with a squeeze of lemon juice or a splash of white wine vinegar**

Watermelon Radishes

Grower: Clarion River Organics

Store: Keep radishes in a plastic bag in your refrigerator.

Hydroponic Lettuce

Store: Refrigerate in a plastic bag.

Collardscrop

Collard Greens

Grower: Tuscarora Organic Growers Coop

Store: Refrigerate in a plastic bag.  **To freeze: (1) Wash greens thoroughly and cut off woody stems; (2) Blanch (plunge into boiling water) for three minutes and chill quickly in ice-cold water; (3) Drain off excess moisture, package in airtight containers or freezer bags and freeze immediately.

Store: Refrigerate in a plastic bag. ** To freeze: Follow same directions as above.

Grower: Blue Goose Farm

Store: Winter squash can be stored on your counter top, no need to refrigerate. For best results, use within two weeks.

Grower: Bedillion Honey Farm

Store: Store honey at room temperature – your kitchen counter or pantry shelf is ideal. **If your honey crystallizes, simply place the honey jar in warm water and stir until the crystals dissolve.

Store: Keep garlic in a cool, dark place with good air circulation away from potatoes and onions.
