2014 Spring CSA Share Week #8, June 4th


This is the 8th and final week of the 2014 Cabin Fever CSA share.  If you are not continuing your share into the summer we thank you for  your membership and hope you enjoyed your experience with Penn’s Corner.  We hope you have a wonderful summer!

For those of you who are continuing on with us through the summer, please note that the Harvest share begins next week.  If you have subscribed to the bi-weekly share, you will receive an email this week letting you know which week your share will begin.  We’re looking forward to sharing a great season with you!

Grow Pittsburgh

Store:  Garlic scapes will keep for about 3 weeks in a plastic bag in the refrigerator.  They can also be chopped and frozen in plastic freezer bags.

Uses:  Though scapes are milder than regular garlic they can be substituted for garlic in any recipe.  They can also be added to salads and eaten raw. Recipe:  Garlic Scape Pesto

Pucker Brush Farm

Store:  Wrap in a dry paper towel and place in a plastic bag in your refrigerator.

Uses:  Adds flavor to dressings, dips, eggs, potatoes, soups and can be used for pickling.

Recipe:  Grilled Salmon with Dill Butter

Rhubarb

Sunny Meadow Farm

Store: Place in a plastic bag in your refrigerator.  The rhubarb will stay fresh for 1-2 weeks (or maybe longer).

Recipe: Rhubarb Upside-Down Cake

Nu Way Farm

Store:  Place dry, unwashed lettuce in an airtight plastic bag in the crisper drawer of your refrigerator.  If you notice that the lettuce is wet, spin dry in a salad spinner before storage or place a paper towel around the lettuce inside the bag.

Store:  Place dry, unwashed lettuce in an airtight plastic bag in the crisper drawer of your refrigerator.  If you notice that the lettuce is wet, pat dry before storage or place a paper towel around the lettuce inside the bag.

Store:  Place kale in an airtight bag in the refrigerator.

Uses:  Eat raw in salads, saute, add to soups or bake into kale chips.

Recipe:  Rustic Red Kale and White Bean Soup

Store: Place chard in an airtight bag in the refrigerator.

Uses:  Eat raw, saute, add to soups or stir-fries, or scatter on homemade pizza before adding cheese.

Recipe:  Spicy Swiss Chard Chips

Green Onions

Nu Way Farm

Store:  Wrap your green onions in a slightly damp paper towel. Place them inside a plastic bag or storage container.

Uses:  Can be chopped and tossed eaten raw or lightly sauteed.  Both green and white parts are edible.

Weeping Willow Farm

Store:  Unopened syrup should be kept in a cool place and one opened it should be placed in the refrigerator.  For long-term storage syrup can be frozen in a glass mason jar.

Russet Potatoes

Store:  Place potatoes in a paper bag and store in a cool, dark place away from onions and garlic.

Uses:  Bake, roast, mash or fry.
