Feta, Green Onion and Lemon Sizzled Eggs

from the Afternoon Off


  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 lemon
  • Sea salt and black pepper
  • Feta cheese
  • Green onions

Heat up pan to medium heat, pour in olive oil and crack two eggs in the pan side by side. Cook for one minute, then add a pinch of salt and pepper and squeeze a half of a lemon into the pan. At this point you can cover the pan with another pan (which kind of steams the eggs and is delicious), but they are completely fine to leave uncovered also! Cook for another minute or two depending on desired doneness and how runny you prefer the yolk. Place the eggs on a plate, add chopped green onions and crumbled feta. I didn’t put measurements because it all depends on how much you love the cheese and onions! I throw in a small handful of each and squeeze the other half of the lemon on top. Serve immediately!!!
